About us

History

The walls of Christian monastery shone
in a beautiful place, huddled in oak forests, clod with green grass.

It cherished a miraculous icon of the Holy Virgin, which healed the sick who believed in the heavenly power.

The monastery was destroyed by the Turks who conquered the lands along the middle reaches of Topolnitza River at the beginning of XV century. They set the monastery on fire and pulled down the high stone walls. Only the solid foundations remained to witness its existence. The Christian centre in the past gave the name of the area – “The Monastery”.

Wine cellar “Manastira” has 300 decares of high standard vineyards from the following varieties: Cabernet Sauvignon, Mavrud, Merlot, Syrah, Ancelotta, Sauvignon Blanc, Chardonnay and Muscat Ottonel.

The winery and the vineyards are located in a region in Bulgaria, which is most suitable for grape growing – Thracian Valley. It is famous for its millennial wine traditions. The climate conditions of the region provide a good opportunity for getting rich and deep wines of “Cabernet Sauvignon” and “Mavrud”. The unique combination of climate and soil characteristics favours for the excellent quality of the wines produced in this area. White and red grapes are cultivated in the district, but the red ones dominate in quantity.

The amount of care taken in the vineyards can affect the quality of the grapes and how fully they ripen. Therefore a group of professionals look after the vineyards during the whole year.

The harvest begins usually in the mid September-October, when the grapes are fully ripe.

Grape clusters are hand – picked. Grapes are transported to the winery in small plastic boxes. Then all of the damaged grapes are manually removed.

Fermentation process takes place in stainless steel tanks.
